Maple Chicken Chili

2 lb. Chicken, chopped into 2-3″ chunks
1 med. onion
2-3 garlic cloves
4 cans of kidney beans (I use two light red, two dark)
1 16oz can of diced tomatoes
1 8oz can of tomato sauce
1 can of corn
3/4 cup maple syrup
salt, pepper, coriander, chili powder, all-spice

Sauté onions, garlic and chicken, drain excess fat. Mix all ingredients in a crock-pot, season to taste and don’t touch for 5-7 hours.

Pretty much amazing.
